There are eight acres of rose fields surrounding Cawthorpe Hall. The clay soil is ideal for roses, and is naturally fertilized and mulched with organic manure. No artificial fertilizers or pesticides are used.

The roses have been in production since 1992 with the planting of Kazanlik, a variety of Damascene rose. Other good varieties include Rugosa - Roseraie de l'hay and Louise Odier. These fine roses are selected for the quality of their scent, which transfers to the rose oil and rose water.
